Calandracas Cheese, Chorizo and Ham Bites

A gorgeous mix of melting cheese and tasty Spanish sausage, wrapped in a ham parcel. We have chosen this super tasty Tapas dish with all the Christmas parties and last minute visitors in mind! It is a very easy dish and can be served as a starter or served on pretty platters as a canapé. These quantities should make about 40 portions but the ingredients can be easily adapted for smaller quantities.

Ingredients

  • Ham
  • Chorizo Sausage, 1cm slices
  • Cheese in slices
  • For the Batter:
  • A can of Beer
  • 280g of Flour
  • A pinch of Bicarbonate Soda
  • A pinch of Paprika

Method

To make the batter, mix all the ingredients in a hand-blender until smooth with no lumps. The mixture should be
quite thick

Work with a small assembly line! Place a slice of ham on a clean work surface, and then place a slice of cheese on top of the ham (It should not overhang the ham) then a slice of fresh Chorizo sausage (no more than 1cm thick).

Roll this up so the sausage is wrapped up in the cheese and ham.

Skewer each parcel with a cocktail stick so it stays together.

Dip the Ham, Cheese & Chorizo rolls in the batter mix so they are evenly coated.

Cook in batches in hot oil in a deep-fat fryer for about 2-3 minutes, leaving the cocktail sticks in place.

Remove carefully from the fryer, resting on kitchen paperto drain.

To Serve

These should be served hot, garnished with a crisp fresh salad.
